TCI 210 - Cooking Without Recipes

The proper flavor and presentation of food requires strict observance to classical cooking techniques. For each class, students will research and prepare all food using one assigned cooking technique; comparing the classical cooking methods with current trends and practices. Students will be provided with a place but no recipe, requiring them to concentrate on the purest elements of the assigned technique. Additional emphasis is placed on textures, flavor pairings, synergism and food affinities.
