Culinary Program Celebrates Recent Successes

Vincent Forchelli was accepted to the Cannes Film Festival Culinary Program. Vincent will travel to France in May for 10 days and be part of the kitchen brigade that will cook at the food pavilion for the Cannes Fim Festival. At the conclusion, the members of the food brigade are treated to a tour of some of southern France's greatest culinary sights and restaurants. Corey Fletcher, an SNHU culinary alumni and Chef at 55 Degrees in Concord, NH, was the last SNHU student to take part in this fantastic opportunity. Forchelli was selected from a nationwide pool of applicants.

Carter Light and Katie Clark competed in the Post Secondary division of the NH Skills USA Competition and won their respective competitions in the Culinary and Commercial Baking Competitions. They will represent New Hampshire at the Skills USA National Competition this June in Kansas City. Previous SNHU students that have placed in the National Competition include SNHU Culinary graduates Matt Mottor, Robert Jensen and Tom Vaiilancourt

Perrin Long and Robert Jensen, a third year SNHU BASHA student and captain of this year's culinary team traveled to New York City April 1-2 to compete in an ACF professional F-1  Mystery Basket Competition. Chefs Long and Jensen competed against nine other teams from the Northeast in a three-hour Mystery Basket Competition. The chefs were provided with a mystery basket which included rabbit, lamb shanks, shrimp, flounder, quinoa, farmers cheese, gooseberries, yogurt, three kinds of mushrooms, baby bok choy, haricot vets, macadamia nuts and more. They had 30 minutes to write their menu and then 2.5 hours to cook the food for 10 portions of a a three course menu and 20 minutes to serve. Chef Long and Jensen received a silver medal and third place out of the ten teams.

The SNHU Culinary Team won a Silver medal at the American Culinary Federation's Northeast Regional Conference held March 25-26 in Toronto, Calif. The team represented the New Hampshire and competed against eight other teams from the Northeast Region. Team members included Robert Jensen, Charles VanBuren, Carter Light, Alex Moro, Beth Duca and coaches Matt Louis and Perrin H. Long.
